A set six-course tasting menu built entirely from local and organic producers in the Montseny and Vallès territory. Each sitting begins with an explanation of the restaurant's off-grid operation and sustainable philosophy, and each course is accompanied by the story of its producer — including smallholder vegetable farms, local cheesemakers, and responsibly sourced fish.

La Calma operates entirely on solar panels and rainwater collection with no grid connections — demonstrating that high-quality sustainable gastronomy is possible even in remote, resource-constrained environments. The restaurant participates in European and regional sustainability frameworks including Europark, Reserva de la Biosfera, and Slow Food Catalonia.

Support for local producer network in Montseny and Vallès

Through consistent sourcing at fair prices, La Calma sustains roughly 20 small-scale local and organic producers — including La Tuca (biodynamic vegetables, Valldoriolf), Tres Terras (three cooperative vegetable growers), Cansuña (organic farm, La Riga), and a local fish supply chain through La Placheta. Staff regularly visit producer sites alongside Slow Food Catalonia activities.
