Linser for Livet
Linser for Livet is a one-person food production business founded in 2019 and based on a farm outside Aarhus, Denmark. Created by a trained chef with a farming background, it sources organically grown Danish legumes — lentils, peas, beans, and lupine — as well as grains such as flaxseed, quinoa, and buckwheat from small-scale farmers, and processes them on-site into whole and flour-based products for retail and direct sale.
The business was the first to bring 100% organically grown Danish legumes to market, working closely with farmers to introduce new crops at commercial scale. It operates as a connector between farmers, a centralised distributor, the Aarhus municipality, chefs, and consumers, while maintaining direct, small-batch relationships with producers and highlighting each farm’s story.
To address low awareness of Danish-grown legumes, the founder integrates education into the business model through workshops, chef training, and recipe development. Funded through a mix of personal investment, informal support, a bank loan, and a pioneering green fund, the business remains intentionally small, with the founder managing all production, packaging, and outreach.
